Ingredients
1/2 of a red onion, Finely diced
1/4 cucumber diced
1/2 bunch coriander Finely chopped
1-2 cloves of garlic
lime juice. 4-6 depending on size
410g of finely diced cod
1 fairly firm Avocado diced
10-15 cherry tomatoes in half
10-15ml Chilli Charm habanero and cranberry hot sauce
1tbs olive oil (or our smoked chilli oil for and extra kick of flavour)
1 1/2 teaspoons of course sea salt
1tsp cracked black pepper
Ceviche of cod
Method
1, Add your fish to a large bowl and all of your other ingredients apart from your lime juice and hot sauce
2, in a separate bowl combine your hot sauce, lime juice, olive oil and mix well
3, poor your lime and hot sauce mixture over your ceviche mix and combined well.
4, cover your bowl and place in the fridge for at least 5 minutes.
5, when you are ready to serve, taste a small amount of your ceviche and season further with cracked black pepper and salt to your preference
we recommend serving this with toasted sourdough bread with a little extra habanero and cranberry hot sauce on top for and extra kick of heat and citrus
