Ingredients

1kg chicken wings

4 tbs course sea salt

110g corn flour

45- 100 ml Chilli Charm Scotch bonnet & smoked chipotle hot sauce

1/4 bunch fresh coriander chopped

This recipe calls for an air fryer.

Crisp, spicy chicken wings

method

1, Place your wings in a large baking tray and pat them dry with paper towel

2, Sprinkle the sea salt over the wings and mix well. leave the wings in the fridge for at least 3 hours

3. Pat the wings dry once again and pre heat your oven to 150 degrees celsius

5, Place the wing in the oven and cook for one hour

6, once cooked allow the wings to sit for 10 minutes and then pat them dry before transferring to a mixing bowl

7, Add the corn flour to the bowl and toss the wings until coated

8, Add the wings to the air fryer, being carful not to add too many wings and the same time. For best results the wings should not be touching each other

9, Air fry at 200 degrees Celsius for 12 minutes.

10, once fried transfer to a mixing bowl and add your hot sauce, the more hot sauce you add the hotter the wings will be. toss well until coated. season the wings with rock salt and some fresh coriander to finish.
